Revisited this issue again after nearly two and a half years. Finally found the culprit.
It turned out to be a *very* old plugin that was setting the date_default_timezone_set() PHP function and wreaking havoc with the correct display of dates and times. After commenting that out all is now – finally – well.
Looks like all is well… Thank goodness :O
And all this just to get one plugin working properly 😀
